Easy Spinach Gouda Quiche

This is a super easy basic quiche recipe! I usually keep all of these ingredients on hand so I can make a quiche anytime. Like on weekends when it’s time to change up the normal breakfast routine.

My daughter loves this ‘breakfast pie’! You can hardly taste the spinach.

Easy Spinach Gouda Quiche

Ingredients

  • 1 deep dish 9 inch pie crust (I buy a pre-made frozen pie crust)
  • 5 eggs
  • 1 cup milk
  • 1 cup shredded gouda
  • 5 oz frozen chopped spinach, unthawed & drained
  • 1/4 tsp salt
  • dash of pepper

Directions

  1. Preheat oven to 375 degrees F.
  2. Bake pie crust for 10-12 min.
  3. Meanwhile, in a bowl mix together eggs, milk, cheese, spinach, salt & pepper.
  4. After crust has baked, remove from oven and add egg mixture.
  5. Return to oven and bake 55-60 min until middle is done.

Notes

  • Pie Crust: If using frozen, be sure to unthaw (If you forget like me, you could pop it in the oven while it preheats for a minute). You could also use regular crust instead of deep dish if you can’t find. You just might not fit the whole mix in so you could cut the recipe back as needed.
  • Cheese: I buy a bag of already shredded gouda. You could also substitute for other cheeses (mozzarella, I think a smoked gouda would be great,…)
  • Spinach: Be sure to drain the excess liquid from the spinach, otherwise your crust will get soggy. You could squeeze the excess liquid out using a cheese cloth if you want to go the extra mile. I’ve never spent the time to do this.

#kid approved – You can hardly taste the spinach! And we call this breakfast pie in our house.. because what kid doesn’t want to eat pie for breakfast?!
