Healthy Toddler Muffins

My 1 year old and 3 year old both LOVE these muffins. They make a great snack or breakfast if we are on the go!

Healthy Toddler Muffins

Great for snack or breakfast on the go!
Servings: 12

Ingredients

  • 1 egg
  • 2 bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla
  • 1 3.5 oz container baby food (ex: carrot, sweet potato)
  • 1/2 cup rolled oats
  • 1 1/2 cup oat flour
  • 1/2 cup white flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup milk

Instructions

  • Preheat oven to 350 degrees F.
  • Mix egg, bananas, applesauce, vanilla, & baby food in medium size bowl.
  • Stir in dry ingredients (oats, oat flour, white flour, soda, baking powder, salt, cinnamon).
  • Stir in milk.
  • Grease muffin pan (makes 12 regular size muffins). Scoop batter into muffin pan.
  • Bake about 16 minutes until toothpick comes out clean.
  • After cool, store in fridge.

Notes

Oat Flour – If you don’t have oat flour, you could make some by putting regular oats in a food processor. Or you could just use whole wheat or white flour.
Stock the freezer – Sometimes I will make a double batch to stock the freezer!

These toddler muffins freeze well. I like to stock my freezer with them!
