Chopped Kale Salad

Hold on.. give kale a shot! I used to not like kale, but now I love it. This salad is one of my favorites.

Chopped Kale Salad

Ingredients

  • 1 bunch kale
  • 2 Tbsp dried cranberries
  • 2 Tbsp shredded parmesan cheese
  • 2 Tbsp sunflower seeds
  • 3 Tbsp olive oil
  • 2 tsp balsamic vinegar (I use a cranberry walnut balsamic)
  • dash of pepper

Directions

  1. Rinse kale and tear off of stem. Chop into thin ribbons.
  2. Make dressing by combining olive oil, balsamic, and pepper.
  3. Pour dressing over kale and mix until kale is well coated.
  4. Add cranberries, cheese, and sunflower seeds.

Notes

  • Additional Toppings: Cooked quinoa, avocado, and grapes (cut in half) are some great add ins to this salad. But have fun trying out different toppings like walnuts, almonds, or other fruit.
  • Balsamic Vinegar: I buy mine from our local Olive Tap store.
