Quinoa Black Bean Bowl

Healthy comfort food! When I want a dish that is comforting and won’t make me feel like crap after I eat it, this is my go to.

This recipe is my attempt to recreate a dish from La Mie in Des Moines. If you live close or are visiting, you must go to La Mie!

Quinoa Black Bean Bowl

Ingredients

  • 1 cup uncooked quinoa
  • 2 cups chicken or vegetable broth (can also use water)
  • 1 bunch kale
  • 1 Tbsp olive oil
  • 1 can black beans (drained and rinsed)
  • 4-5 eggs
  • 1-2 avocados

Directions

  1. Cook quinoa according to package directions using broth instead of water (can use water if desired).
  2. Rinse kale and tear off of stem. Tear into bit size pieces. Use salad spinner or dab with towel to remove excess water.
  3. In a sauté pan over medium heat, add 1 Tbsp of olive oil and kale. Sauté until kale has some nice golden brown coloring. Dump kale into a bowl. Set aside.
  4. When quinoa is done, add in the black beans to the same pot. Stir occasionally over low heat until beans are heated through. Add in kale.
  5. In same pan used to sauté the kale, fry up the eggs (over easy or sunny side up).
  6. Scoop quinoa black bean mixture into bowl and top with egg and sliced avocado.

Notes

  • Omit: This dish is still yummy even if you omit the egg or avocado.
