Hold on.. give kale a shot! I used to not like kale, but now I love it. This salad is one of my favorites.

Chopped Kale Salad
Ingredients
- 1 bunch kale
- 2 Tbsp dried cranberries
- 2 Tbsp shredded parmesan cheese
- 2 Tbsp sunflower seeds
- 3 Tbsp olive oil
- 2 tsp balsamic vinegar (I use a cranberry walnut balsamic)
- dash of pepper
Directions
- Rinse kale and tear off of stem. Chop into thin ribbons.
- Make dressing by combining olive oil, balsamic, and pepper.
- Pour dressing over kale and mix until kale is well coated.
- Add cranberries, cheese, and sunflower seeds.
Notes
- Additional Toppings: Cooked quinoa, avocado, and grapes (cut in half) are some great add ins to this salad. But have fun trying out different toppings like walnuts, almonds, or other fruit.
- Balsamic Vinegar: I buy mine from our local Olive Tap store.
