Chocolate Peanut Butter No Bake Cookies

I have a major sweet tooth, but I also like to watch my sugar intake. I have been tweaking this recipe for some time to come up with this healthier version of no bake cookies that actually taste good!

Chocolate Peanut Butter No Bake Cookies

Ingredients

  • 1/4 c unsalted butter
  • 1/4 c milk
  • 3 Tbsp unsweetened cocoa powder
  • 3 Tbsp raw honey
  • 1/3 c peanut butter
  • 1 tsp vanilla
  • 1 1/2 c quick oats
  • 1 Tbsp flax meal (optional)

Directions

  1. In a medium saucepan over medium low heat, stir together butter, milk, cocoa powder, & honey until melted.
  2. Take off heat and add peanut butter and vanilla.
  3. Then stir in oats and flax meal.
  4. Drop by spoonful onto parchment paper and put in fridge to cool for about 30 minutes.
  5. Keep stored in fridge as these are a gooey cookie.

Notes

  • Milk: I use 1% milk, but you could use your milk of choice.
  • Peanut Butter: I use Skippy’s natural creamy peanut butter (just 2 grams added sugar per serving). If you want a zero added sugar peanut butter try Smucker’s natural creamy peanut butter.
  • Flax Meal: I add flax for added nutrients and fiber.
