Overnight Oats – Chocolate Peanut Butter

Oats are super nutritious and a great source of vitamins, minerals, and fiber.

Overnight oats are prepped the night before so when you wake up, breakfast is ready! And if your mornings are super hectic, just grab it and bring it to work.

This is a recipe my toddler loves to help make and eat!

Overnight Oats – Chocolate Peanut Butter

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1-2 tsp honey (or pure date syrup)
  • 1 tsp unsweetened cocoa powder
  • 2 tsp peanut butter
  • 1 tsp mini chocolate chips (optional)

Directions

  1. Dump all ingredients into a mason jar (or any container).
  2. Mix (stirring with a butter knife works best for me).
  3. Cover and refrigerate overnight.

Notes:

  • Peanut Butter: I like to use natural peanut butter. I have found that Smucker’s Natural Creamy Peanut Butter has no added sugar (I am always looking at added sugar on food labels).
  • Try making different flavors: Start with the base ingredients (oats, milk, & honey), then add your favorite mix ins. I enjoy adding cut up fresh mango and unsweetened coconut flakes. Frozen fruit would work great too! For a pop of flavor try adding a tiny splash of vanilla or almond extract.
  • Pure Date Syrup: This is one of my favorite natural sweeteners. I use the Date Lady’s pure organic date syrup. I buy this off of Amazon.
