I have a major sweet tooth, but I also like to watch my sugar intake. I have been tweaking this recipe for some time to come up with this healthier version of no bake cookies that actually taste good!
Chocolate Peanut Butter No Bake Cookies
Ingredients
- 1/4 c unsalted butter
- 1/4 c milk
- 3 Tbsp unsweetened cocoa powder
- 3 Tbsp raw honey
- 1/3 c peanut butter
- 1 tsp vanilla
- 1 1/2 c quick oats
- 1 Tbsp flax meal (optional)
Directions
- In a medium saucepan over medium low heat, stir together butter, milk, cocoa powder, & honey until melted.
- Take off heat and add peanut butter and vanilla.
- Then stir in oats and flax meal.
- Drop by spoonful onto parchment paper and put in fridge to cool for about 30 minutes.
- Keep stored in fridge as these are a gooey cookie.
Notes
- Milk: I use 1% milk, but you could use your milk of choice.
- Peanut Butter: I use Skippy’s natural creamy peanut butter (just 2 grams added sugar per serving). If you want a zero added sugar peanut butter try Smucker’s natural creamy peanut butter.
- Flax Meal: I add flax for added nutrients and fiber.
