Healthy comfort food! When I want a dish that is comforting and won’t make me feel like crap after I eat it, this is my go to.
This recipe is my attempt to recreate a dish from La Mie in Des Moines. If you live close or are visiting, you must go to La Mie!
Quinoa Black Bean Bowl
Ingredients
- 1 cup uncooked quinoa
- 2 cups chicken or vegetable broth (can also use water)
- 1 bunch kale
- 1 Tbsp olive oil
- 1 can black beans (drained and rinsed)
- 4-5 eggs
- 1-2 avocados
Directions
- Cook quinoa according to package directions using broth instead of water (can use water if desired).
- Rinse kale and tear off of stem. Tear into bit size pieces. Use salad spinner or dab with towel to remove excess water.
- In a sauté pan over medium heat, add 1 Tbsp of olive oil and kale. Sauté until kale has some nice golden brown coloring. Dump kale into a bowl. Set aside.
- When quinoa is done, add in the black beans to the same pot. Stir occasionally over low heat until beans are heated through. Add in kale.
- In same pan used to sauté the kale, fry up the eggs (over easy or sunny side up).
- Scoop quinoa black bean mixture into bowl and top with egg and sliced avocado.
Notes
- Omit: This dish is still yummy even if you omit the egg or avocado.
