Garlic Roasted Tomatoes on Toasted Sourdough

Any time I see cherry or grape tomatoes on sale, I buy them and make this.

So simple yet so delicious. I could eat this as a snack or main course.

Garlic Roasted Tomatoes on Toasted Sourdough

Ingredients

  • 1 pint cherry or grape tomatoes
  • 1 Tbsp olive oil
  • 1 tsp minced garlic
  • salt & pepper
  • 4 slices sourdough bread
  • feta cheese for sprinkling (optional)

Directions

  1. Preheat oven to 425 degrees.
  2. Dump tomatoes into a small oven safe baking dish (I use a glass Pyrex dish).
  3. Add in olive oil, garlic, salt & pepper (to taste) and stir.
  4. Roast in the oven for about 30 minutes. I like to turn it on broil the last couple minutes to give a nice char.
  5. Meanwhile toast the sourdough in a toaster.
  6. Top with roasted tomatoes and sprinkle with feta (if desired). I also add a little drizzle of olive oil on top. Enjoy!
